Sweet Potato Truffle

Can sweet potatoes get any more amazing than they already are? Why yes, just add CHOCOLATE. (Noticing a theme in my posts? Eek! Obsessed much?)

My mother’s childhood friend Sue sends me the BEST recipe sites.
She says, “Not sure if you’ve come across these sites or not..check out the sweet potato truffle. OMG.”

  1. Thanks for posting my recipe and photo! Glad you like the sound of the truffles. If rolling the filling into balls and coating it in chocolate seems to difficult, there’s also the option of making little chocolate cups (in mini-muffin tins)–sort of like Reese’s PB cups, but much healthier (and with sweet potato filling, of course) 😉

  2. I can’t wait to try them Ricki! I make cakeballs, very similiar to your truffles. I have fallen in love with the Wilton candy molds for this process. I take a dollop of chocolate and spread it up the sides of the mold, let it cool, add my filling and spread another dollop over the top to seal the chocolate together. When cool they pop out of the mold making pretty truffles. The mess of working with melted chocolate is cut to bare minimum! ;0)
