Vegan Chocolate Cookies

Chocolate Cookies


½ cup margarine
1 cup dry sweetener (ex: sugar)
1 ½ tsp vanilla extract or mint extract
Egg replacer, equal to 1 egg*
1 tsp baking soda
½ tsp salt
1 cup rolled oat flakes
¼ cup cocoa
½ cup flour

Preheat oven to 350 degrees F. In a large bowl, stir together the margarine, sweetener, vanilla, egg replacer, baking soda, and salt. Stir in the rolled oats, followed by the cocoa, and then the flour. Stir until well mixed. Spoon a heaping tablespoon of dough onto a cookie sheet and press flat with your fingers. Bake for 8-10 minutes or until edges are browned. Let cool on the sheet before moving them. Makes 12 cookies.
