2 cups gluten-free flour blend
1 1/2 tsp. baking powder
1/2 tsp. baking soda
1/4 tsp. salt
1/2 tsp. ground cinnamon
1/4 tsp. ground nutmeg
2 eggs (you may use egg replacer)
1 1/2 cups mashed, ripe bananas (I use 4)
1 cup sugar
1/2 cup canola oil
1. Preheat oven to 350F. Spray medium bread pan with nonstick cooking spray or grease with vegetable spread and reserve.
2. Combine dry ingredients. In a seperate bowl combine eggs, banana, sugar, and oil. Gently mix all ingredients together. Pour or spoon batter into your bread pan.
3. Bake for an hour or until a toothpick comes out clean.
*You may also wish to substitute eggs for a gluten-free approved egg replacer.
