Stir Fry Gluten-Free/Vegan

Borrowed from my boyfriend’s lovely parents ❤

Olive Oil (we always use EVOO…Extra Virgin Olive Oil) enough to fully coat bottom of skillet
3 -5 Green Onions, thinly sliced including the green tops (called scallions sometimes)
1 Green Pepper, chopped
1 Yellow or Orange Pepper, chopped (these give color)
4-5 Carrots peeled and thinly sliced
Sundried tomatoes packed in oil (come in a jar in produce section); use about 1/4 to 1/2 of the jar
5-6 Garlic cloves, thinly sliced or chopped big (garlic comes in a "bulb"; break off what you want to use)
Any other veggie you'd like: zucchini, squash, brussel sprouts or broccoli
1 cup Pine Nuts

1. Put enough Olive oil in large skillet to fully coat bottom of skillet, heat on high or close to high
2. Brown pine nuts in oil (add oil as needed in process) stirring nuts frequently (watch carefully; they burn easily)
3. Toss all veggies except garlic in when nuts have turned golden; stir regularly
4. Add your spices…basil, oregano, thyme, S/P etc…Whatever spices you like (teaspoon of each is good)
5. Add garlic and stir in; then add meat if using… (Adding garlic near the end retains the garlic flavor)

Start the Pasta (of your choice) cooking when almost finished with cooking veggies… angel hair only takes about 5 minutes; or penne or small rigatoni…any and all would be good. Bon Apetit!!
