Vegan Cornbread Gluten-Free/Vegan

1 1/2 cups nondairy milk
1 1/2 tablespoons vinegar
1 cup cornmeal
1 cup bob’s red mill gluten-free flour mix
2 tablespoons sugar
1 teaspoon sugar
3/4 teaspoon salt
1 teaspoon baking powder
1/2 teaspoon baking soda
2 tablespoons olive oil

Preheat oven to 425. Lightly oil a 9-inch square baking dish. Combine soymilk and vinegar and let stand. In a large bowl, mix dry ingredients. Add soymilk mixture and oil. Stir just until blended. Spread the batter into pan. Bake for 20-30 minutes, or until a toothpick inserted in the center comes out clean.
