Vegan Snickerdoodles

Topping:
3 tbsp sugar
1 ½ tsp ground cinnamon

Cookies:
1 1/3 cup flour
¾ cup sugar
2 tsp baking powder
¼ tsp salt
1 tbsp ground flax seeds
3 tbsp water
½ cup vegan margarine

Preheat oven to 400 degrees F. In a small bowl, stir together the sugar and cinnamon and set aside. In a medium bowl, stir together the flour, sugar, baking powder, and salt. In a small bowl, stir together the flax seeds and water. Add margarine and flax mixture to flour and stir until well blended. Shape dough into 1 ¼ inch balls, roll in the cinnamon-sugar mixture, and place on cookie sheet. Bake for 8-10 minutes. Remove from oven and let sit 2-4 minutes before removing to place on cooling rack. Makes 16 cookies.
